Banana and chocolate tea loaf
using a Circulon Loaf tin
Serves: 1 Loaf

Ingredients
4 really ripe bananas - peeled 80 g soft butter - must be soft 1teaspoon vanilla extract 180 g light muscovado brown sugar 1 free range egg - beaten 200 g good quality dark or milk chocolate - cut into small chunks 180 g self raising flour 1 teaspoon baking powder
Method
1. Preheat the oven on to 180°C/350°F/gas mark 4.
2. Grease the 2 lb loaf tin.
3. Break the bananas into pieces and put into a big bowl.
4. Mash with a potato masher
5. Add the soft butter and vanilla extract and mash again
6. Add the sugar and egg and mix with a wooden spoon
7. Add the chocolate and mix.
8. Add the flour and baking powder, quickly mix together and spoon into the tin.
9. Bake for 40 minutes - check to see if the cake is going brown, you may need to cover with baking paper and then bake for an other 15 minutes.
